Archy's recipe for ultra-fluffy pancakes with hazelnut cream
Fluffy pancakes have become a staple of gourmet brunches. Thicker and airier than classic pancakes, they are incredibly soft and light , almost like clouds.
In this recipe, we accompany them with our Archy white chocolate hazelnut cream , a smooth and indulgent paste that adds an irresistible touch.

Ingredients (for 6 to 8 fluffy pancakes)
For the pancakes

150 g of flour

1 tablespoon of sugar

2 teaspoons of baking powder

1 pinch of salt

2 egg yolks

2 egg whites

150 ml of milk

1 tablespoon of oil or melted butter

1 teaspoon of vanilla extract
For the topping

Fresh fruit: blueberries, raspberries or banana slices

Cocoa powder or icing sugar (optional)
Prepare the fluffy pancake batter
In a first bowl, mix the dry ingredients : flour, sugar, baking powder and salt.
In a second bowl, whisk together the liquid ingredients : egg yolks, milk, oil (or melted butter) and vanilla extract.
Next, whisk the egg whites until stiff peaks form using an electric mixer. This step is essential for obtaining thick and airy pancakes.
Incorporate the liquid ingredients into the dry ingredients, then gently add the beaten egg whites to maintain a light and fluffy texture .
Cooking fluffy pancakes
Heat a non-stick pan over low to medium heat and grease it lightly.
